We make lots of IPAs and co-fermentation sours around here, so why not combine the best of both worlds and brew an amalgamation of both worlds!
Ultimately, we decided to use our unique co-fermentation souring process in tandem with an IPA hopping schedule using two of our favourite North American hops Citra and Krush. The result is something completely unlike anything we have ever brewed before, in a very delicious way. Expect notes of tart citrus, papaya, and galia.
