Natural Sparkling Skin Contact Wine
The grapes are crushed and macerate on skins, partially for twelve hours, partially for eight days. It is then pressed off into stainless steel for fermentation. When the wine reaches 12g/L of residual sugar, it is chilled, racked, and bottled. Fermentation finishes in bottle resulting in a delicately petillant wine (think Vinho Verde). It is released without SO2.
