Fermented in red wine barrels for 2, 3 & 4 years this blend combines the unique characteristics of both methods. The blend of 75% Spontaneous and 25% Mixed Fermentation gives the depth and complexity of Spontaneous with the brightness and vibrance of Mixed Fermentation. The result is a balanced beer with stone fruit and ripe apple aromatics, savoury wine depth, with a bright citrus finish and medium acidity.
