Natural Sparkling Rosé
Vinification method: Grown by the Lippsitt family on a 130-year-old farm on heavy clay soils. Hand harvested Concord grapes were pressed on a very long press cycle with lots of rotation to naturally extract juice from these hard-to-press grapes. The wine was fermented naturally to dryness and allowed to settle at a cold temperature to aid in stability. Bottled with an addition of juice to reach a desired pressure of 2 bar.
Tasting notes: A very light version of supersonic as this wine was bottled with lower pressure. Bottled into a lighter-weight glass to cut down it's carbon footprint.
Red in colour with high acid and light bubbles. The unmistakable foxy aromatics run rampant through the wine. Unmistakably Canadian with a touch of finesse from the winemaking team. Juicy, tart nostalgia!
