Astobiza 'Txakoli'

We select the grapes by plot and harvest them by hand in small crates. The second selection is done on a sorting table, followed by the following processes: destemming and cold maceration before gentle pressing, static settling of the must, fermentation at a controlled temperature, inertization, stabilization, and microfiltration.

Tasting Notes: Clean and bright. Straw yellow in color with green hues. Intense varietal aromas, with notes of white fruit (pear and apple), citrus (grapefruit), and stone fruit (peach). Fresh on the palate, flavorful, balanced, with a long and persistent aromatic finish, featuring slight bitter and mineral notes characteristic of the varietal and influenced by the soil.
