Natural Red Wine
This vintage is from 2023. Five grape varieties from Yamagata Prefecture (Steuben, Merlot, Hokujun, Cabernet Sauvignon, Cabernet Franc) are all destemmed. Skin fermentation in stainless steel tanks and amphorae for 6 to 15 days. 50% aged in amphorae, 40% in stainless steel tanks, 10% in 500L old barrels. Unclarified, unfiltered, no antioxidants or other additives are used.
Tasting Notes: Various storage containers such as stainless steel tanks, wooden barrels, and amphorae are used, and the aroma is a complex combination of fresh berry fruits, spices, fern-like herbs, and fragrant elements reminiscent of oolong tea.
