What would an Irrational birthday party be without a beer that showcases our unique co-fermentation process?! We use our house culture to sour the beer during the fermentation process, creating a depth of flavour that simply isn’t possible with kettle souring. With a plethora of high-protein malts and an obscene amount of fruit puree, this beer is worthy of celebration. We opted for dragon fruit puree this year that brings a unique flavour; think an amalgamation of kiwi, citrus, and berry. Expect a rich, thick mouthfeel with notes of sweet and tart dragon fruit.
