Vinification: Grapes are harvested by hand when ripe, generally in September. 10 days skin contact with spontaneous fermentation in stainless steel. Frozen must added before re-fermentation in bottle during Spring. No disgorgement. . Made with ambient yeasts, without the use of chemicals at any stage of the working process.
Tasting Notes: Pink grapefruit over crushed stone with just a hint of tart apple skin. Very, very drinkable.
