Natural Red Wine
This cuvée is a blend of Cinsault and Grenache grapes from Saint-Julien-en-Saint-Alban. The blend, which may vary slightly depending on the harvest, is approximately 75% Cinsault and 25% Grenache.
At the winery, the Grenache grapes are destemmed and the Cinsault grapes are left whole. Fermentation lasts approximately one week – the exact duration depends on the rate of fermentation. After pressing, the wine will finish fermenting in concrete tanks, then be racked once to clarify the wine before it spends the winter in concrete tanks.
The wine is bottled in the spring without filtration.
