Vinification:
Basically the pet-nat version of Weiss. Hand-harvested; native yeast fermentation; bottled mid-fermentation to capture natural CO2 (pétillant naturel method); some skin contact for color and texture; no disgorgement; unfined, unfiltered, no added sulfites, no additions
The wines are now barrel aged to ensure no sediments in the bottle, resulting in cleaner, more refined sparklings.
Tasting notes: Always delicious and a crowd PLEASER!! Lychee, Gauva, Pineapple, Vanilla, Cinnamon. Perfectly fruity and super fun. Long, slightly grassy and tangy finish. Love this!
