Natural Red Wine
Winemaking:
Organically grown grapes are from medium clay soil. Selected yeast fermentation. Soft pressing, temperature controlled fermentation with selected yeasts, delicate pumping over, and maceration on the skins for 12 days. Part of the wine in barrique for 6 months, the rest remains in stainless steel silos at a controlled temperature before being assembled. Aged 4 months in bottle, minimum SO2.
Tasting Notes: Black cherry and wild berries, hints of spice and black pepper, with subtle vegetal notes on the nose.
