Harvest: Hand-picked in the first week of September with careful selection of the bunches.
Vinification: Brief cold maceration at 6°C for 24 hours with the skins. Spontaneous fermentation at a controlled temperature in stainless steel.
Processing: No fining, no filtration.
Aging: In stainless steel for approximately 12 months.
Tasting Notes: Mineral and fragrant, with notes of morello cherry, honey, and wildflowers. Fresh, savory, well-structured and long-lasting, with citrus aftertaste.
