Wild Cider with foraged mulberries | 2022

Mulberries are the fruit that started it all.
On an organic farm in 2014, I got the fermentation bug and started fermenting everything I could get my hands on. The first thing I made was Mulberry wine.
Mulberries ripen inconsistently, so you get a mix of unripe and over ripe fruit when you shake a tree. The unripe berries add acid while the overripe ones bring that jammy blueberry/grapefruit note that reminds me of long summer walks.
We stomped foraged mulberries to make this bottle, leaving them in cider for months before bottle conditioning.
