Natural White Wine
From the Alps to the Mediterranean, SFERA is a collaboration with small certified-organic farmers to bottle Liters in limited runs.
Vinification: Hand harvested mid-September. Grapes are from 30-year-old vines in clay and limestone soils (with sea fossils) at 200 meters in elevation. Direct press, and fermentation in stainless steel tanks for 14 days. Elevage in stainless steel on its lees for 6 months with weekly batonnàges. Sulphur: 72 mg/l added during the press and at bottling
Tasting Notes: Citrusy, ocean breeze freshness, pronounced mineralilty balanced by a gentle, creamy texture from lees aging - a pretty wonderful every day white wine.
