Natural Rosé Wine
In addition to seeking out old vines and using indigenous grapes, Michael Cooper likes to innovate. The wine is made with the care and detail like that of a Champagne, hand harvested using small baskets and whole-bunch lightly pressed into concrete. Only the ‘Saignee’ or free-run juice is taken after a short time on the skins. It has a fine rose color and is surprisingly soft on the palate. It is a perfect match for watching the sunset.
Tasting Notes: Delicate aromas of red berries, cherries and strawberries . On the palate it is dry and crisp with juicy flavors of raspberry and citrus.
